Porta anche profumi dolci e intensi che escono dalle cucine delle case. \u00c8 il periodo dell\u2019anno in cui si preparano alcuni dei dolci pi\u00f9 tradizionali dell\u2019isola, ricette antiche che parlano di famiglia, di festa e di frutti della terra.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">In questo articolo ti voglio raccontare tre dolci tipici dell\u2019inverno sardo: <b>pabassinas<\/b>, <b>pan\u2019e saba<\/b> e <b>ossus de mottu<\/b>. Ognuno ha una storia, un significato e un legame speciale con ci\u00f2 che la natura dona in questa stagione.<\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Pabassinas: i dolci dei giorni dei morti<\/span><\/h3>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Le <i>pabassinas<\/i> sono biscotti morbidi e profumati, decorati spesso con una glassa bianca e piccoli zuccherini colorati. Il loro nome viene dalla parola <i>pabassa<\/i>, che in sardo significa <b>uva passa<\/b>.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Le pabassinas infatti sono ricche di: uvetta, noci, mandorle e spezie come cannella e chiodi di garofano.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Si preparano soprattutto tra fine ottobre e novembre, nel periodo dedicato alla commemorazione dei defunti. In passato, questi dolci venivano scambiati tra le famiglie e offerti ai parenti che venivano in visita. Oggi sono una delizia che non manca mai sulle tavole autunnali e invernali.<\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Pan\u2019e saba: il pane dolce fatto col vino cotto<\/span><\/h3>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Il <i>pan\u2019e saba<\/i> \u00e8 uno dei dolci pi\u00f9 antichi della Sardegna e ha un sapore ricco e intenso. Il suo ingrediente principale \u00e8 la <b>saba<\/b>, cio\u00e8 il mosto d\u2019uva cotto lentamente fino a diventare uno sciroppo dolce e scuro.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">A questo si aggiungono: noci, mandorle, uvetta, scorza d&#8217;arancia e spezie.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Il pan\u2019e saba \u00e8 legato alle feste invernali, in particolare al Natale. \u00c8 un dolce che richiede pazienza e tempo, perch\u00e9 ogni famiglia ha la sua ricetta, spesso tramandata da generazioni. \u00c8 un vero simbolo della Sardegna agricola, quella che non sprecava nulla e che trasformava il vino in un tesoro dolce da condividere nei mesi pi\u00f9 freddi.<\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Ossus de mottu: \u201cossa dei morti\u201d, i biscotti della tradizione<\/span><\/h3>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Gli <i>ossus de mottu<\/i> sono biscotti duri, croccanti, spesso aromatizzati con limone o anice. Il loro nome significa \u201cossa dei morti\u201d, proprio perch\u00e9 si preparano nel periodo dedicato alla commemorazione dei defunti.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Anche qui ritroviamo gli ingredienti tipici dell\u2019inverno sardo: mandorle e noci.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Questi frutti secchi erano molto importanti per le famiglie di un tempo, perch\u00e9 si conservavano bene e davano energia durante i mesi freddi. Non a caso, tanti dolci tradizionali invernali contengono proprio mandorle, uvetta e noci: sono i doni della natura che maturano tra fine estate e autunno e che accompagnano l\u2019isola per tutto l\u2019inverno.<\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Il legame tra dolci e frutti dell\u2019inverno<\/span><\/h3>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">In nessun altro periodo dell\u2019anno si usano cos\u00ec tanto <b>mandorle, noci e uvetta<\/b>. Questo perch\u00e9 in autunno si raccolgono noci e mandorle. Inoltre, la vendemmia conclusa da poco ha regalato tanta uvetta.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Per questo la cucina tradizionale sarda, soprattutto quella dei dolci, segue il ritmo della natura. I dolci d\u2019inverno non sono solo ricette: sono un racconto della terra, delle famiglie, delle feste e della cultura dell\u2019isola.<\/span><\/p>\n<p class=\"p1\" style=\"text-align: left;\"><span class=\"s1\">Se un giorno visiterai la Sardegna in inverno, ti consiglio di assaggiare questi dolci.
